1 pound ribeye steak, thinly sliced

1 tablespoon olive oil

1 onion, finely chopped

1 green bell pepper, finely chopped

2 cloves garlic, minced

Salt and pepper to taste

2 cups shredded provolone cheese

12 egg roll wrappers

Heat olive oil in a skillet over medium-high heat.

    Add the thinly sliced ribeye steak and cook for about 3-4 minutes until browned.

      Stir in the chopped onion, green bell pepper, and minced garlic. Cook for another 5 minutes until the vegetables are soft.

        Season the mixture with salt and pepper to taste, then remove from heat.

          Allow the mixture to cool slightly, then fold in the shredded provolone cheese until combined.

            Place an egg roll wrapper on a clean surface, with a corner pointing towards you.

              Spoon about 2 tablespoons of the cheese-steak mixture into the center of the wrapper.

                Fold the bottom corner over the filling, then fold in the two side corners. Roll tightly to enclose the filling, sealing with a little water if necessary.

                  Repeat with the remaining wrappers and filling.

                    Heat oil in a deep fryer or large pot to 350°F (175°C).

                      Fry the egg rolls in batches until golden brown and crispy, about 4-5 minutes per batch.

                        Remove from oil and drain on paper towels.
