Mediterranean Spinach Grilled Cheese

4 slices of sourdough bread

150g fresh spinach, washed and roughly chopped

100g feta cheese, crumbled

1 small red onion, thinly sliced

1 medium tomato, sliced

2 tablespoons olives, pitted and chopped (black or green)

2 tablespoons olive oil

1 teaspoon dried oregano

Salt and pepper to taste

100g mozzarella cheese, shredded

Anleitungen
 

In a skillet, heat 1 tablespoon of olive oil over medium heat. Add the sliced red onion and sauté for about 3-4 minutes until they become soft and translucent.

    Add the chopped spinach to the skillet, stirring until wilted, which should take about 2-3 minutes. Season with salt, pepper, and dried oregano. Remove from heat.

      In a mixing bowl, combine the sautéed spinach and onion mixture with crumbled feta cheese and chopped olives. Mix well.

        Take 2 slices of sourdough bread and brush one side of each slice with olive oil.

          On the unbrushed side of one slice, layer a handful of the spinach and feta mixture, add a couple of tomato slices, and top with shredded mozzarella. Place the other slice of bread on top, brushed side up.

            Heat a non-stick skillet over medium heat. Place the sandwich in the skillet and grill for about 3-4 minutes on each side, or until the bread is golden brown and the cheese is melted.

              Repeat the process for the second sandwich.

                Once grilled to perfection, remove from the skillet, slice in half, and serve immediately.
