Zutaten
  

250g Spaghetti or your pasta of choice

200g fresh spinach, washed and roughly chopped

2 tablespoons olive oil

3 cloves garlic, minced

1 lemon (zest and juice)

100g cherry tomatoes, halved

50g grated Parmesan cheese (optional for serving)

Salt and pepper to taste

A pinch of red pepper flakes (optional for a slight heat)

Bring a large pot of salted water to a boil. Add the spaghetti and cook according to package instructions until al dente. Reserve 1 cup of pasta cooking water before draining.

    In a large skillet, heat the olive oil over medium heat. Add the minced garlic and sauté for about 1 minute until fragrant but not browned.

      Add the cherry tomatoes to the skillet and cook for another 2-3 minutes until they start to soften.

        Stir in the chopped spinach and cook until wilted, about 2 minutes.

          Zest the lemon directly into the skillet and then add the juice, stirring to combine.

            Add the drained pasta to the skillet along with reserved pasta water, starting with ½ cup. Toss everything together until combined. If the pasta seems dry, gradually add more pasta water until you achieve your desired consistency.

              Season with salt, pepper, and red pepper flakes, if using. Toss again to mix well.

                Serve hot, garnished with grated Parmesan cheese if desired.
