8 Irish sausages (bangers)

4 large potatoes, peeled and chopped

2 cups kale or cabbage, finely chopped

1 cup milk

4 tablespoons butter

1 bunch green onions, chopped

Salt and pepper to taste

Olive oil for cooking

Begin by boiling the chopped potatoes in a large pot of salted water. Cook for about 15-20 minutes or until tender.

    In a separate pan, heat a splash of olive oil over medium heat. Add the sausages and cook until browned on all sides, approximately 10-12 minutes. Remove from pan and keep warm.

      Once the potatoes are cooked, drain them and return to the pot.

        Add the milk, 2 tablespoons of butter, and a pinch of salt and pepper to the potatoes. Mash until smooth and creamy.

          In the same pan used for the sausages, add the remaining butter and sauté the chopped kale or cabbage until wilted, about 5 minutes. Stir in the green onions during the last minute of cooking.

            Fold the sautéed greens into the mashed potatoes and mix well until combined.

              To serve, create a mound of colcannon mash on each plate, topping it with the cooked sausages.
