4 slices of sourdough bread

1 large onion, thinly sliced

2 tablespoons unsalted butter

1 teaspoon olive oil

1 teaspoon sugar

1 teaspoon thyme (fresh or dried)

Salt and pepper to taste

1 cup Gruyère cheese, shredded

½ cup mozzarella cheese, shredded

¼ cup Dijon mustard

In a large skillet, heat the butter and olive oil over medium heat.

    Add the sliced onion to the skillet, sprinkle with sugar, and season with salt and pepper. Cook, stirring occasionally, until the onions are caramelized and golden brown, about 15-20 minutes. Add thyme in the last few minutes of cooking.

      While the onions are caramelizing, preheat another skillet or griddle over medium-low heat.

        Spread a thin layer of Dijon mustard on one side of each slice of sourdough bread.

          On the non-mustard side of two slices, layer half of the Gruyère and mozzarella cheeses, followed by a generous scoop of the caramelized onions (dividing equally), and then top with the remaining cheese.

            Close the sandwiches with the other slices of bread, mustard side facing in.

              Toast the sandwiches in the preheated skillet for 3-4 minutes on each side, or until the bread is golden brown and the cheese is melted and gooey. Add a little butter to the skillet if needed for extra crispiness.

                Remove the sandwiches from the skillet, let them cool for a minute, and then slice in half to reveal the gooey cheese and onion filling.
