4 plain bagels, halved

4 large eggs

1 cup milk

1 cup shredded cheese (cheddar or your choice)

1/2 cup cooked bacon, crumbled (or sautéed vegetables for a vegetarian option)

1/2 cup diced bell peppers

1/2 cup chopped spinach

1/4 cup finely chopped onion

Salt and pepper to taste

1 teaspoon dried oregano (optional)

Fresh herbs for garnish (like chives or parsley)
