Crockpot Pierogi Casserole

1 pound frozen pierogi (cheese and potato filling)

1 large onion, thinly sliced

2 cups shredded cheddar cheese

1 cup sour cream

1 can (10.5 oz) cream of mushroom soup

1 cup vegetable broth

1 teaspoon garlic powder

1 teaspoon dried dill

Salt and pepper to taste

2 tablespoons olive oil

Fresh chives for garnish

In a skillet over medium heat, warm the olive oil. Add the sliced onions and sauté until they are caramelized and golden brown, about 10-15 minutes. Set aside.

    In a mixing bowl, combine the cream of mushroom soup, vegetable broth, sour cream, garlic powder, dill, salt, and pepper. Mix until smooth.

      In the bottom of your crockpot, create a layer with half of the frozen pierogi.

        Spread half of the caramelized onions over the pierogi, followed by a layer of half of the cheese.

          Pour half of the soup mixture over this layer.

            Repeat the layers with the remaining pierogi, onions, cheese, and soup mixture.

              Cover the crockpot with its lid and cook on low for 5-6 hours, or until the pierogi are tender and heated through.

                Before serving, sprinkle fresh chives on top for a pop of color and flavor.
