1 cup (225g) unsalted butter, softened

1 cup (200g) brown sugar, packed

1/2 cup (100g) granulated sugar

2 large eggs

2 teaspoons vanilla extract

3 cups (375g) all-purpose flour

1 teaspoon baking soda

1/2 teaspoon salt

1 1/2 cups (270g) chocolate chips

For the Cheesecake Filling:

8 oz (225g) cream cheese, softened

1/3 cup (40g) powdered sugar

1 teaspoon vanilla extract

1 tablespoon lemon juice

Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.

    In a large mixing bowl, cream together the softened butter, brown sugar, and granulated sugar until light and fluffy.

      Add the eggs one at a time, mixing well after each addition. Stir in the vanilla extract.

        In a separate bowl, whisk together the flour, baking soda, and salt. Gradually add the dry ingredients to the wet mixture, mixing until just combined. Fold in the chocolate chips.

          For the cheesecake filling, beat the softened cream cheese in a medium bowl until smooth. Add the powdered sugar, vanilla extract, and lemon juice, mixing until creamy and well incorporated.

            To assemble, scoop a tablespoon of cookie dough and flatten it slightly in your hand. Place 1 teaspoon of the cheesecake filling in the center and then wrap the cookie dough around it. Roll into a ball and place on the prepared baking sheet. Repeat with the remaining dough and filling.

              Bake in the preheated oven for 10-12 minutes until the edges are golden but the centers look slightly underbaked (they will set as they cool). Let the cookies cool on the baking sheet for a few minutes before transferring them to a wire rack to cool completely.
