Cajun Chicken Alfredo Stuffed Shells

12 jumbo pasta shells

2 tablespoons olive oil

1 pound chicken breast, diced

1 tablespoon Cajun seasoning

1 cup heavy cream

1 cup grated Parmesan cheese

1 cup shredded mozzarella cheese

2 cloves garlic, minced

1/2 teaspoon black pepper

1/4 cup chopped fresh parsley

Prepare the Pasta: Boil a large pot of salted water. Cook the jumbo pasta shells according to the package instructions until al dente. Drain and set aside.

    Cook the Chicken: In a large skillet, heat olive oil over medium heat. Add the diced chicken and sprinkle with Cajun seasoning and black pepper. Cook for about 5-7 minutes, or until the chicken is cooked through and browned. Add minced garlic and sauté for another minute until fragrant.

      Make the Alfredo Sauce: Pour in the heavy cream, and bring the mixture to a gentle simmer. Stir in the Parmesan cheese and half of the mozzarella cheese until melted and smooth. Adjust seasoning with salt as needed.

        Combine Chicken and Sauce: Add the cooked chicken to the Alfredo sauce and stir until well-coated. Remove from heat.

          Stuff the Shells: Preheat your oven to 375°F (190°C). Take a spoonful of the chicken and Alfredo mixture and carefully stuff each cooked pasta shell. Place the stuffed shells in a greased baking dish.

            Top with Sauce and Cheese: Pour any remaining Alfredo sauce over the stuffed shells. Sprinkle the remaining shredded mozzarella cheese on top.

              Bake the Shells: Cover the baking dish with aluminum foil and bake in the preheated oven for 20 minutes. Remove the foil and bake for an additional 10 minutes or until the cheese is bubbling and golden.

                Serve: Garnish with chopped fresh parsley before serving for a touch of freshness.
